The Coup

The Coup in Calgary serves made-from-scratch vegetarian food in an intimate setting, with fresh ingredients and a warm welcome. Meals begin with a welcoming shrub shot of vinegar, intended to prepare the body for the food to come. Creative dishes and beverages feature whole, organic and local ingredients, offering a thoughtful balance of flavour and nourishment. Ecological care reaches beyond the plate. Products are selected according to environmental ethics, while the restaurant recycles what it can and uses only post-consumer recycled paper products. It also plants 36 trees each month through Tree Canada to offset waste. Compost supports its garden and nearby beehives help produce some of the vegetables served to guests.
