EIGHT is a truly unique culinary experience. Showcasing a fresh expression of Canadian cuisine, the restaurant aims to spark an evening long dialogue around Canadian food and its definition. EIGHT looks at ingredients, techniques and flavours found in specific homes across Canada, nestled into the niches of the cultural mosaic that makes up the Canadian identity. Cuisine at EIGHT is not defined only by location, culture and circumstance, but by the chaotic conflation of the three. Flavours are born of migration, whether it be indigenous-inspired or international. EIGHT aims to marry technique passed down through history and tradition, not just between mothers and sons, but neighbours, friends and loved ones – whose stories may have begun in vastly different places, but who found a home in Canada. EIGHT’s menu is constantly evolving and is designed on the day by Chef Darren MacLean. Head Chef Darren MacLean cooks and serves daily tasting menus of meticulously sourced Canadian Ingredients paired with the techniques and flavour profiles of Canada’s multicultural mosaic. Canada’s fruitful lands allow for the freshest and diverse seasonal ingredients from farm to table. Served in 12 courses, the menu offers bitesize, complex flavours to excite and entice the palette. The result offers up culinary taste ecstasy. MacLean’s fish dry-aging chamber is among the first in Canada to be custom built, which serves as a focal point of the neighbouring room in NUPO, allowing guests to see in through a small porthole to witness that magic first-hand.
