Spirit Hills Honey Winery
Spirit Hills Winery is a true family-run local success story. Beginning in December of 2012, it is owned and operated by Ilse and Hugo Bonjean and their family. Their bees have free range of the pastures and forests throughout the Millarville area. During this time, both Ilse and Hugo take steps to live more closely with the land. Not only do they grow all of their own food, they bring this philosophy of sustainability into the apiary. They produce Spirit Hills honey without sacrificing the environment around them. They source local ingredients to blend with the mead base. Local berries like black currants and saskatoons are macerated into the wine for several weeks. Local wild flowers are also added to bring enticing floral components to both the bouquet and taste of the wines.
