As they do in Naples Italy, Famoso uses only highly refined, imported ‘00’ Caputo flour to make its dough. The pizzas are hand-stretched and tossed to create a soft and crispy thin crust that is naturally low in gluten. Imported tomatoes from Southern Italy’s Campania region and fresh, creamy fior-di-latte whole-milk mozzarella are used on all of the pizzas. The pizzas are then baked for 90 seconds at 482 degrees Celsius in an Italian pizza oven. Traditional Neapolitan pizza, non-traditional service and unpretentious wine make Famoso a perfect place for a quick bite after a long hike.
